
LUCA GIAROLA
Luca spent his childhood among his grandfather’s olive trees on the hills overlooking Lake Garda. This is where his passion for the land was born—a passion he chose to pursue after graduating as an electrotechnical expert. He began by working for third parties, refining his skills in olive cultivation. He then attended specialized courses to deepen his knowledge of pruning and olive grove management, and later completed a professional olive oil tasting course.
He was finally ready to take the big step: he first rented an olive grove, and later purchased it; several others would follow. This marked the beginning of his journey as an olive grower and the creation of his own brand: Azienda Agricola Luca Giarola, which today includes 5 hectares of olive fields on the hills surrounding Lake Garda.

The Azienda Agricola Luca Giarola is located on the oriental side of Lake Garda, within Lazise, Bardolino, and Garda. All the olive trees—some centuries old, others more recently planted—are positioned in breezy areas, facing southwest with excellent sun exposure. This protects them from disease. Furthermore, all the groves overlook the lake, benefiting from its unique microclimate. Depending on the terrain’s morphology and soil characteristics, the company produces three types of olive oil:
- In the southern part of the lake, between Bardolino and Lazise, from flat and clay-rich soils, comes the Delicate Oil.
- On the slopes rising from Garda towards the hills at 300–400 meters, where the soil is more calcareous, come the Garda DOP and the Fruity Oil.
To produce high-quality extra virgin olive oil, Azienda Agricola Luca Giarola follows traditional methods enhanced by innovative techniques:
- early harvesting of the olives around early October—this results in a lower yield in quantity, but a much higher quality, with more intense aromas
- maximum care during harvesting to preserve the integrity of the fruit
- daily delivery to the mill to prevent the onset of mould
- cold pressing using a state-of-the-art mill
- immediate filtration of the oil and storage at controlled temperature in stainless steel tanks with an ozone layer to prevent oxidation
My dream has become reality: tending different olive groves to create an oil that bears my name, born from the passion and dedication of someone who has found his path in the shade of olive trees. Luca Giarola
